
The reward at the alpine refuge was a pilsner from one of the premier brewers in the Alto Adige, Forst. Located in Merano (or Meran in German), Forst began producing beer in 1857 and has been in under the same ownership since it was bought by Joseph Fuchs in 1863. Forst beers are always poured with good sized “head” or “cappello di schiuma”. The proper “spillatura” or pouring of a Forst beer is so important that there are instructions for it on their website. We enjoyed our Forst with Speck (smoked ham), cumin scented bread, horseradish, and pickles.
