Umbria has been extremely hot the past two weeks. Midday temperatures have topped out at 38-40 degrees centigrade (around 100 degrees) with a very hot wind from the south. It has not been great “eating” weather. The temperatures do cool in the evenings and this salad of lentils, tomato and poached egg hit the spot. A pork cutlet followed this primo and we washed it down with an excellent Sagrantino.
